Amazake is a fermented rice drink, dating back to the Kofun period between Japan’s 3rd and 7th centuries. Just like the popular fermented drink Kombucha, the origin of Amazake is a fungus known as Koji. Koji is also the origin of shochu, sake, and other fermented drinks.
